STICKY BLUEBERRY, DATE AND NUT CHOCOLATE PUD



What better way to celebrate hump day than with a gooey, guilt-free, chocolate treat!

This is such a delicious sweet treat which is vegan friendly and completely free of refined sugar, sweetened only with natural fruit!

It is so sticky and crunchy and super quick to whip up. I prefer using medjool dates in my desserts rather than normal, dried dates as they are so much sweeter and stickier. You can pick them up in most supermarkets these days.

Despite this dish tasting like absolute dessert heaven, it also has a number of nutritional benefits, to name a few;

- High in fibre from the dates and nuts
- High in antioxidants from the blueberries
- High in magnesium from the cacao powder

It's great to share with friends, or enjoy by yourself on the sofa with a hot cuppa!

Ingredients: 

1 cup of Medjool dates - destoned
1/2 cup of pecans
1 cup of walnuts
1 heaped tbsp. cacao powder
1 tbsp. coconut oil
2 tbsp. natural Greek yogurt or coconut yogurt - optional 
Handful of blueberries 

Method: 

Add 1/2 cup of walnuts into a food processor and blitz, set to one side.

Then add the dates, peacans, cacao powder, coconut oil and the other 1/2 of walnuts into a food processor and blitz until combined.

Spread the mix into a dish or cake tin and press evenly. Sprinkle with the remaining walnuts and add the blueberries on top to finish.

Can eat immediately however for best results, place in the fridge for approx. 30 minutes.

Serve with natural Greek yogurt or coconut yogurt - optional.

PALEO SUMMER FRUIT AND NUT CRUMBLE


I absolutely love crumble, no matter what time of year it is!! I made this dish for my family and it was an absolute winner - gone in minutes. 

Traditional crumble is often loaded with sugar and flour however this healthy version is free from; wheat, gluten, dairy, grains and refined sugar, so is perfect for all the paleo and vegan lovers! 

The ingredients aren't made with any fancy superfoods, just simple, delicious fruit and nuts that you can obtain in your local grocery store. I used peaches for the base to create a warm, summer feel and made the topping by blitzing together different types of nuts, honey and cinnamon. I promise you, it resembles the exact taste and texture of a traditional crumble! 

This dish is a perfect dessert for entertaining and since it's loaded with nutrition, it also makes a great breakfast that will keep you fuelled throughout the day! I love serving mine with little natural Greek yogurt or coconut yogurt.

Ingredients:

6 peaches - destoned
2 apples
1 cup of almonds
1 cup of walnuts
1/2 cup of pecans
1 tbsp. honey
1 tbsp. coconut oil
1 tbsp. cinnamon
1 tsp. nutmeg
2 tbsp. of natural Greek yogurt or coconut yogurt to serve - optional 


Method:

Preheat the oven to 160 degrees.

Chop the peaches and apples into chunks and spread out evenly in an oven proof dish.

Add the almonds, walnuts, coconut oil, honey, cinnamon and nutmeg into a food processor and pulse until combined. 

Spread the nut topping over the fruit in the dish. Roughly chop the pecans and sprinkle over the top to finish. 

Pop the dish in the oven for approx. 30 minutes. If you notice the topping starts to burn, remove dish from the oven and cover with tinfoil, then pop it back in the oven for the remaining time.

Serve immediately with natural Greek or coconut yogurt.
