5 SPICE SWEET POTATO AND CARROT SOUP


I've really noticed a shift in the weather recently and I'm starting to crave lots of warming, autumnal food after a long day at work. This 5 spice soup is packed with nutrition and full of flavour, perfect for those cosy nights in. 

I'm also trying to incorporate lots of soups into my diet at the moment as my tummy can be super sensitive sometimes. Eating soup can help rest the gut as it's absorbed into you digestive system really quickly, which involves minimal work for your tummy. I find if I have a flare up in symptoms, after eating soup for a couple of days it really helps get my tummy back to normal again. 

Ingredients:

2 sweet potatoes
2 carrots
1 white onion
1 tbsp olive oil
1cm knob of fresh ginger- peeled
1 tsp cayenne pepper
1 tbsp paprika
1 tbsp cinnamon
1 tbsp garam masala
1 tbsp turmeric
Pinch of salt



Method:

Chop the onion and add into a large pan, along with the olive oil and lightly saute for 5 minutes.


Add in the ginger and the 5 spices; cayenne pepper, paprika, cinnamon, garam masala and turmeric, along with a pinch salt and saute for a couple of minutes.

Peel and chop the sweet potatoes and carrots into square cubes and add into the pan.

Add in 2 cups of water and simmer on a low heat for approx 30 minutes, until the veggies are soft. If the water boils away, add a little more.

Once the veggies are soft, remove from the heat and place in a blender. Blitz until it becomes soup constancy. If the soup is too thick, add a little more water.
